What happens when nuts are used as a botanical in gin distillation?

Would you believe that it’s actually very common practice for nuts (and other fruits and herbs) to be used in gin production and they are actually key ingredients of popular gins like Bombay Sapphire and Beefeater Gin?

During distillation, the protein is stripped from the allergens and therefore is not carried over into the gin. There’s some more information here from the European Food Safety Authority which we hope you find helpful.
